From Ioanna Fotiadi, Kathimerini (in Greek) - A pioneering extraction technology, through the Contherm system, replaces the traditional method of kneading the olive oil. "This technology homogenizes the olive paste in just 30 seconds instead of 60 minutes so total production time is limited from 90-100 to 14 minutes."
